Vegetarian baked spaghetti squash casserole

Baked spaghetti squash casserole - vegetarian

1 spaghetti squash
olive oil
1 egg
1/2 cup ricotta cheese
4 baby bella mushrooms sliced

1/2 cup mozzarella cheese
1jar ready made spaghetti sauce

Cut squash in half lengthwise, brush olive oil on cut side of squash, lay face down on baking sheet. Cook in oven 30 minutes on 350.
Remove and let cool. Remove squash by running with a fork buy scraping sides of the squash the same direction as the strings.
Cook mushrooms in small pan with a tsp olive oil until tender.

In mixing bowl mix egg and ricotta cheese. Mix in cooled squash and pour into a baking dish. Cover with layers of mushrooms, sauce and top with cheese. cook in oven on 350 for 20 minutes and serve.

4lbs lost in one week!

Kelly is down 4 lbs as of last Saturday. She has stuck to the diet per the letter and taken the supplements everyday. She has done great so far!
